This book is not an exhaustive list of every Victorian recipe, nor is it a full modernisation of Mrs Crocombe’s scribbled notes, but it is somewhere in between. The recipes you will find in these pages are indicative of what Avis would have been cooking at Audley End and well over half of them are taken from her own recipe book. The others are from sources we know she had access to, or can reasonably surmise that she may have used.
We have used Avis’ idiosyncratic spelling for the titles of her own recipes where it differs substantially from the usual form. Her minor misspellings we have corrected for ease of reading: for example Maitre dHotel is now Maître d’Hôtel.
