Antipasto, which translates as “that which comes before the meal, ” is usually served at more formal meals or for guests. The portions should be small because they are followed by several courses and are meant to stimulate, not satiate, the appetite. These dishes are also well suited to a buffet because almost all can be served at room temperature.
