1.20 P.M. In the kitchen there is a problem. A logjam. A Bang-Bang Chicken and Caesar Salad jam. When a waiter takes an order he first writes it in his book and then types it into the Remanco computerised till. There are four, one in each station in the dining room. Remanco is the great unknown and unsung hero of restaurants, a computer system that separates orders into parts, remembers them, lists them, correlates them and generally makes itself Mr Indispensable. It spits out slips of paper from a ticker-tape machine at each station downstairs in the kitchen.
