Soups, a showcase of the season in miniature, are usually eaten with or at the end of the meal. Apart from ramen, Japanese noodles are quite different to the Chinese, and the soup stock is made with great care to set off their flavour. Buckwheat noodles in particular have a very delicate aroma, and are eaten with a simple dipping sauce.
