Boiling in Salted Water

For me, this is a far better way to cook vegetables than steaming them. If you take green beans, for example, the fastest (and therefore healthiest) method to cook them evenly is in boiling water, since they are surrounded by the water and cook at the same time. When they are stacked in a steamer, the steam gets to the parts of the beans not touching each other, and not to the areas in contact with other beans. For boiling to be the superior method, however, there has to be a lot of water (several quarts), so that it never goes off the boil.
