Hazelnuts (also called filberts), walnuts, and almonds are a veritable triumvirate in the Austro-Hungarian pastry kitchen. They’re sprinkled over dumplings, turned into fillings for buns, and used to create the base for many tortes. Buy them in bulk from a reliable source, such as a natural foods store. Store nuts in self-sealing plastic bags in the refrigerator for up to 3 months or freeze them for up to 6 months.
