Spend an extra couple of pounds if you can on free-range chicken, especially when you consider that if you’re getting four to five portions from a good-sized chicken, it makes a very cheap main course.

You get that amazing colour in the skin of a corn-fed chicken and the corn helps develop taste, but if you really want to get good flavour, it’s best to choose a free-range corn-fed chicken.

With an organic chicken, you’re buying the caviar of birds. You know the flavour will be better because the chickens have led a more natural life with space to roam.
