Rice is usually the sun around which the rest of the dishes revolve like planets in a Korean meal. When Taekyung ate her meals she would often spoon little bits of the dishes and even soup into her rice and mix them together. But this is not the only way rice is eaten in Korea. It is eaten plain, cooked into a creamy porridge, mixed with grains and beans, or turned into delicious pilaf dishes. Taekyung’s rice pilafs are cooked with inspired classics like cubes of juicy pork, daikon radish, and chopped kimchi. Our sticky rice—made with black rice and sweet rice—is mixed with chestnuts and dates for a slightly sweet snack, picnic fare or a surprising starch to serve alongside roast turkey or pork.
