PEOPLE MISTAKENLY THINK OF BEANS as time-consuming and bothersome to cook, prosaic and humble fare that is bland and uninteresting to eat. This is simply not true.
While dried beans do take time to soak and cook, they can be almost totally unattended. And if you cook a big batch, you can freeze some in small containers and have them ready in minutes for soups and pasta dishes, main dish stews, and more. In addition, rinsed and drained canned beans can be substituted for cooked dried beans in any of our recipes.
