Scottish Shellfish is a co-op that began as individual mussel and oyster farmers who came together to get everyone’s produce into restaurants. It’s led by myself and Rob Mitchell, our commercial director, alongside the board of shellfish farmers. Our purpose-built factory near Glasgow allows us to efficiently process and supply their products to consumers across the nation, and our farms now stretch the length of mainland Scotland and the Shetland Isles.
