Regardless of which variety of lentil you purchase, make sure that you rinse them well before cooking them. Lentils can be dirty things. Also, it’s a good idea to pick through them quickly to check for hard debris or rocks mixed in with the lentils. Sometimes that happens.
Once you’ve cleaned your lentils, just add them to a pot with the recommended amount of water. Usually that’s about 2 to 3 cups of water for each cup of lentils. There’s no need to soak lentils like other dried legumes. You can cook them right away.
