When your lentils are done cooking, they should be tender but not mushy at all. Drain them when you’re happy with their texture and season with a bit of salt. If you’re serving these lentils on their own as a side dish, I also recommend stirring in a small knob of butter and maybe a drizzle of olive oil. You can keep extra lentils for up to a week in the fridge.
