I challenge you to make the exact amount of rice you need for a meal. I think it’s impossible. You either fall short or have leftovers. It’s some unwritten physical rule of the kitchen that the rice in the pot will expand or contract to make sure you never have the perfect amount you need.
To solve this problem, I just cook a bunch of it, because more is better than not enough. This is especially true when dealing with a food like rice that keeps well and can be used in dozens of different ways. It’s one of the most consumed foods on the planet for a reason.
