Puff Pastry dough is an unleavened pastry dough composed of flour, water, and butter. Two parts—a flour-based dough and a butter block— are stacked and folded using the double-turn technique, which keeps them from blending into a uniform mixture and creates hundreds of distinct layers. The dough ratio is 8 FLOUR : 9 FAT : 4 LIQUID.
