A skillet supper is like a stew in that it has all the makings of dinner in a single pot. What distinguishes this type of dish from a stew or casserole is that it requires almost no liquid and the taste and texture are quite different.
I make these kinds of one-pot meals either if I’m not sure when we’ll be eating or if I need to make dinner in a hurry. The time saver is that any type of ingredient cut into small pieces (which can be done hours ahead of time) cooks much more quickly than if left in large pieces.
