The starters here that are of Spanish origin are typically bold and rich in flavour, and all have a key speciality ingredient which acts as its cultural anchor. The Muslim Mediterranean recipes, however, are lighter and more fragrant, and are characterised by the sparing use of spices as well as the subtle contrasting flavours of yoghurt, blossom waters and fruit.
