Walk into any bar in Spain and there will be a tortilla sitting on the bar. Made fresh that day with the best eggs and a handful of local or seasonal products, it’s a light pick-me-up that goes equally well with beer or a glass of light wine. Sliced to order and sprinkled with salt, the tortilla is the perfect snack food.
There are just as many recipes for the tortilla as there are for the French omelette, but unlike the omelette in which the filling is encased in folded egg, like an envelope, the tortilla’s fillings are incorporated into the egg mixture and cooked in the pan.
