One of the great things about pies is that they can be made any time of year. While the warmer seasons present us with a carousel of thrilling fruits to work with, the colder months offer other opportunities.

The recipes in this section all belong to a family of interrelated pies that include custard, chess, and nut pies. Since they all contain dairy, eggs, and sugar or some kind of sweetener, I see these pies as existing on a spectrum that ranges from rich and creamy to super rich and very sweet—all of which are ideal for a decadent winter treat.
