Winkles and Cockles

Gather the winkles from a part of the beach that is known to be clean and pure. Try to take some clean sea water home, to cook them in. Wash them well under a running tap, scrambling them round with your hand, to remove all the mud and sand.
Put a pan of well-salted water or sea water, deep enough to cover the winkles, on to boil. When the water comes to the boil throw them in and turn the heat up. When it returns to a full boil, let them cook for one or two minutes, then drain and run under the cold tap to cool.
