The stencil method is a special technique used with a particular type of soft dough or batter. This batter is often called stencil paste. It is used not only for making this type of cookie but also for making ribbon sponge cake for decorative work. The recipe for Almond Tuiles illustrates the stencil method using a simple round stencil, but it is possible to cut a stencil in nearly any shape for making decorative pieces or special desserts. For example, the recipe for Sesame Tuiles calls for a triangular stencil because the cookie is used in a special dessert plating.
