I cut melon three different ways depending on how I want to utilize the rind. If I don’t want the rind on at all, I tip and tail the melon. Next, resting one of the cut ends on the cutting board, I use a sharp knife to cut away the rind in large strips. I try to walk the line between not leaving any green behind and not gouging the sweet flesh. Then I cut the melon in half, remove the seeds, and go forth cutting into wedges or cubes.

If I want the rind left on entirely, I cut the melon in half, remove seeds if needed, and then place cut-side down and cut into classic wedges that look like Cheshire Cat smiles.
