Clod, shin, ribs, flat ribs, brisket, sirloin or fillet, thin flank, rump, aitch bone, thick flank, top side, shank – the thick, creamy dotted lines mark traditional cuts on the rich brown silhouette of a bull painted on wood that hangs on the wall of John Penny’s office. The office is small and quite plain, apart from the bull, a pink glass paperweight, and a child’s letter and drawing pinned among the faxes and orders on the notice board. It is a purposeful place, but then John is a purposeful man.
