Although available year-round, Jerusalem artichokes are at their best from late fall to midwinter. Some varieties are left in the ground over the winter and harvested in the spring. The tubers should be very firm and free of blemishes, soft spots, or signs of sprouting. Choose tubers of the same size so they will finish cooking at the same time.
