Taro is available year-round in most supermarkets and in Asian, Indian, and Latin American markets. Both the eddoe and dasheen varieties are roughly spherical, but the eddoe is small, varying between the size of a golf ball and a tennis ball, and the dasheen can be quite large, up to 9 inches/23 centimeters in diameter. The flesh can be creamy white, pale pink, white with speckles of purple, or even mauve. Select taro that is very firm with no soft spots, wrinkled skin, cracks, or signs of mold. The more evenly shaped the roots are, the easier they are to peel. Large taro roots, which tend to be more cylindrical, are often cut and sold in smaller sections. Look at the cut ends to make sure they are fresh and free of mold.
