There are two precautions related to taro. First, although selection over the years has reduced the amount of oxalic acid crystals in the outer layer of the corm, it is important to wear disposable surgical gloves or to coat your hands with cooking oil when peeling taro to prevent skin irritation, especially for anyone with sensitive skin. Second, never eat taro raw, as the oxalic acid compounds can irritate the throat. Taro must always be cooked thoroughly.
