Garlic is a powerful seasoning that can be used raw or cooked to mellow its pungency. I usually use less garlic in fresh preparations due to its intense and potent flavor. Remember to sauté minced or sliced garlic just for a few seconds as it burns quickly, and tastes bitter and unpleasant.
