Salmon is one of the most beautiful and versatile fish available and salmon farming has turned into a major industry, accounting for most of the salmon consumed today.
The wild salmon is a migratory fish, born in a river, living in the sea and finally, swimming thousands of miles to return to the river of its birth to spawn. This tones the flesh and develops the muscles which give it a superior texture and colour as compared with the farmed salmon which has less flavour and flesh and can be flabby and tasteless from lack of exercise.
