These soups actually require heat and therefore forethought, as they have to be chilled. They can be made ahead, sometimes, as in the Zucchini Gazpacho, where the base is made at the moment when there is a plentitude of an ingredient, far ahead.

Zucchini is only one of the vegetables that deluge the garden with their ripeness all at one time. Those who do not garden will find that the produce is cheapest and best at these seasons of the year. This is when the risk of glut and feelings of loathing for a lovely vegetable can come upon one. Then I make bases to use throughout the year, when they are a blessing. It is following the old model of putting up tomato purée for winter use.
