Southern Texas is filled with comfort food and this extends into starters and side dishes. This chapter is filled with my family’s indulgent starters and sides for any gathering. Corn is at the foundation of many dishes, and we also make plenty of gooey cheese dishes such as Choriqueso. These recipes are a sampling of my family’s Rio Grande Valley fare that is potluck and barbecue friendly.
