What to do with Meats Left Over from Making Broth

As mentioned earlier, sometimes generous seasoning can make meat used for broth usable in salads or ravioli. Generally, though, it will be dried out and short on flavor. Chop it up and serve it to the family pet.
An alternative is to simmer the meat or fish in the broth just long enough to cook it through and then serve it right away or have it cold the next day. Obviously, however, broth made this way will be very light, because the meat or fish won’t have released all its flavor into the surrounding liquid.
