‘Kambly Bretzeli,’ replied Beat Haldemann, when I asked him his favourite cookie.
And why not, that’s his flour inside.
The Haldemann mill in Trubschachen has been providing flour to the Kambly cookie factory for over a century. With no actual contract in place, it was a shake of hands between the elder Haldemann and Kambly in 1910 that sealed the deal, one that still exists today.
The mill itself has been in operation since 1860, and Beat and his wife Evelyn are already its fifth generation of family owners. On the day I visited, Beat showed me the three floors of the mill. The grain is brought to the top and through a complicated system of tubes is transported through the grinding machines until the desired fineness is reached.
