Located in Old Havana near the Museum of the Revolution and the National Museum of Fine Arts is a home built in 1766, that houses two restaurants owned and run by Chef Iván Rodriguez and his business partner, Chef Justo Perez. Iván Chefs Justo is upstairs, and Al Carbon is below.

Chef Iván originally rented the upstairs to run Iván Chefs Justo restaurant. After great success with this first eatery, Iván was able to buy the whole building. He then opened Al Carbon downstairs, with a separate entrance around the corner. Both restaurants are decorated with antique objects and iconic photographs of famous American actors, such as Marilyn Monroe and Audrey Hepburn, displayed with photos of Cuban stars from the first half of the twentieth century. A collection of old clocks and phonographs covers every inch of wall space. Iván said the clocks “reflect the stuff, noise, people, activity, and energy of the outside world.”
