If you’re struggling with a recipe that’s too spicy for your taste, know that the berbere will mellow the longer it simmers and rests, so it will be noticeably milder after resting for several hours. The contrasting tang from injera will also cool it down, as will milder, creamy foods like Ayib, Butecha, Ye’souf Fitfit, Ye’selit Fitfit, a mild alicha wot, or even just the simple addition of chopped avocado sprinkled with salt.
