One of my earliest experiences with Italian food involved the simplest yet the most splendid appetizer—warm focaccia served with dipping oil and balsamic vinegar on a large plate. The formula for this is very straightforward:
[Spices + Herbs + Good Oil] + Good Vinegar + Flaky Salt + Warm Bread = Happiness
Here are some playful takes on this concept. Serve the oil with 1 to 2 Tbsp of a good fruity or sweet vinegar, like balsamic, fig, plum, or sherry vinegar.
