I feel deeply honoured to have been asked by Tola Akerele to write this foreword and commend this important cookbook of Nigerian cuisine.

Nigeria’s rich cultural diversity—250 ethnic groups and over 500 languages—implies an equally splendid variety of culinary delights. However, unlike other nationalities whose foods are to be found in numerous international cookbooks, there has not yet been extensive documenting of Nigeria’s culinary offerings.
It is perhaps no surprise that it has taken a woman of many parts and paths, with multiple talents in investment banking, interior design and hospitality, to further bridge this gap with her new coffee-table cookbook, The Orishirishi Cookbook.
