WHITE—White teas are made from young leaves (new-growth buds) that have undergone no oxidation. The tea is low in caffeine, gentle, complex, and sweet … best with delicate foods. Fine ones include Bai Mu Dan, Yin Zhen, and organic snow buds. White tea can be very expensive.

GREEN—Made from young leaves that have experienced little oxidation. There are many classic green teas; two excellent ones are Dragon Well (Lung Ching) and Yellow Mountain (Mao Feng). The Chinese sages believed green tea bestowed long life and wisdom.
