Eating out of doors has great appeal for almost everyone and, given the right weather, a barbecue can be great fun. Keep the menu simple with grilled or fried foods; avoid lavish sauces and instead use spicy marinades or bastes to give a variety of flavours. Crisp unusual salads, hot breads and baked potatoes take the place of vegetables. Prepare as much in advance as possible, leaving only the salads to be tossed, bread to be heated through, and the main dish to be cooked over the barbecue.
