If you have no time to make marmalade now, store Seville oranges in polythene bags in the freezer to use later. Freeze in quantities required for your marmalade recipe, adding an extra orange or so to allow for a slight loss of pectin content, the result of freezing. The oranges must be used frozen and therefore are only suitable for a recipe where the fruit is cooked whole. Follow the recipe for chunky Seville marmalade when using them at a later stage.
