Using the Freezer in March

With schools breaking up at the end of the month, early March is a good time to batch-bake bread and cakes for holiday teas. Victoria sandwich cake layers freeze well wrapped in polythene freezer bags. Thaw at room temperature and fill as required. Cake layers can be sandwiched with buttercream like this month’s recipe for lemon sandwich cake. For freezing it is advisable to omit the glacé icing, which tends to become thin and runny on thawing, and simply give the cake a dusting of icing sugar before serving.
