There are four main types of onions: white, red, yellow and Bermuda. The white onions are smallest and mild in flavor. Yellow onions are larger and have a stronger flavor. Red onions are about the same size and are similar in flavor. Bermuda are the largest of all and have a mild sweet flavor. Polish recipes say "No good cook would use onions without scalding them first."
