Cheese is one of those ingredients indispensible in the kitchen and kitchens in Ukraine are uniquely blessed with the range and quality of the nation’s cheeses. One hallmark of Ukraine cheeses is a certain bitter tang because the animals yielding milk for cheese production are fed on hay.

The dairy industry in Ukraine has experienced highs and lows in recent years but has benefitted from help from international institutions that have helped place it on a firmer footing. That is good news because in the area of craft cheeses alone, there are quite simply too many to count.
