The reader should hear the way Guisell laughs. You can almost hear it in her smile; it’s a laugh indicating that the world is indeed a complicated place while also implying she always knows what’s right (or at least has an opinion on the matter). But no matter what might be right, she will be there for you. So, basically, insert that sound every forty-six words or so to get the full Guisell effect.

“I came here to the States in 1987,” says Guisell. “My father worked for the Chilean consulate as a butler in the house. He had been, before that, in the air force. He was a great cook, and he always took care of the mess hall for the air force guys. I came from that—big parties with the family—and the main thing was cooking for the people that were coming over. And that has always been my thing, too: what are the people going to eat?”
