Following are eight simple tips to ensure your leftovers stay fresh and wholesome and will become delicious meals in their own right.
  • Let food cool slightly before refrigerating, then chill before freezing.
  • Transfer the cooled food to an airtight plastic or glass container, leaving room for expansion if freezing.
  • Store leftovers in the refrigerator for up to 4 days or in the freezer for up to 4 months.
  • Freeze food in small batches, which allows you to heat up just enough to serve one or two people.
  • Clearly label items for freezing with the dish name and date they were made. Remember to move them to the refrigerator a day before eating so they can be reheated quickly.
  • Be sure to thaw frozen foods in the refrigerator or in the microwave (to avoid bacterial contamination); never thaw them at room temperature.
  • Don’t crowd foods in the refrigerator or freezer. Air should circulate freely to keep foods evenly cooled.
  • As you plan your weekly meals, check the contents of the refrigerator to determine what ingredients should be used that week. Aim to eat leftovers within a day or two.
