Fat has been vilified for so many years, and there’s a lot of confusion surrounding good and bad fats. It’s worth doing a little reading and learning, but I love incorporating beautiful, healthy, natural fats into my food, and can definitely see and feel the benefits. They are highly nutritious and full of slow-releasing energy, but need to be eaten in moderation. I use a lot of avocado, coconut oil, milk and cream, nuts and nut butters, seeds, quality cold-pressed extra-virgin olive oil, animal fats from healthy, grass-fed animals, carefully sourced fish and seafood, quality cheeses, eggs and full-cream dairy.
