Flavors of Cambodia

 

Cambodian cuisine is not one of the better known cooking styles of the region but it has much in common with its Southeast Asian neighbours, including a penchant for punchy flavours. Rice – long-grain and glutinous – are staples. Grilling is a common means of cooking meat, poultry and fish (mostly river fish), and dishes are often given freshness and aroma with lemongrass. The recipes in this collection are not hard to make and they're very rewarding.
