Barley porridge is a typical Latvian side dish that is usually combined with bacon, but I prefer to add lots of cheese and serve it with seasonal vegetables on top. In spring, I’d usually go for asparagus, replacing it with purple sprouting broccoli or brussels tops later in the year. You could also use a mixture of greens, of course. If you’re a meat-eater, feel free to add some crisp bacon bits to your greens too!
