This is one of the best fish pies ever. The secret is the combination of white, pink and smoked fish under a layer of very light, creamy mashed potatoes. It is perfect for parties, because all the preparation can be done in advance.

Method

Preheat the oven to the first setting. Brush a large piece of foil with melted butter. Season the salmon with salt and pepper and lay it on the foil. Twist the foil edges together to make a tightly-sealed but baggy parcel. Make another, similar parcel with the fresh cod or haddock fillets. Bake the fish until just cooked through.
