Sweet without being cloying, this refreshing drink is a classic example of the “new” seasonal cocktail, based on fresh herbs and fruit. Make it when summer berries are ripe and bursting with flavor and rich color. It can be adapted with tarragon, lemon balm, or other herbs in place of, or along with, the mint.

Ingredients

  • 4 large, juicy blackberries
  • 8 fresh mint leaves
  • Ice cubes
  • ½ ounce</

Method

In a shaker, use a muddler to crush the mint leaves, then the blackberries. Fill with ice and add the agave, tequila, and lime juice. Cover tightly and shake vigorously for 30 seconds. Strain into a chilled martini glass and top up with a splash of chilled sparkling wine. Perch a blackberry on the rim and tuck a mint sprig into it like a stem, or just float a mint leaf in the drink.
