Eggplant was the queen vegetable of Al-Andalus, originally from Persia. Again, etymology proves this fact—as the word transited from the Persian bahhimjan to the Arabic badinjan to the Spanish berenjena. Eggplant fritters, an absolute classic of Córdoba that has conquered Andalucía, are usually drizzled in honey or molasses—you can substitute either for the Pedro Ximénez reduction used here.
