Habanero chiles and a generous quantity of garlic spice up the red onions. It’s a good idea to wear rubber gloves when working with chiles, especially habaneros, one of the hotter varieties. The onions complement tacos and are equally delicious on steak or chicken sandwiches.
Have ready hot, sterilized jars and their lids.
Put the onion slices in a large nonreactive saucepan and add water to cover and 2 tsp of the salt. Bring to a boil over medium-high heat and cook for 1 minute. Drain and return to the pan.
